Ali’s & Dan’s Wedding Spice Cake

In honor of our anniversary today, here’s the recipe for our delicious wedding cake, eaten 9 years ago today in celebration.  Happy Anniversary, Dan!

My friend Cathy made this fantastic cake for our wedding.  I returned the favor by becoming a notary public so I could officiate at her wedding.  The cake was gorgeous and more importantly, delicious. We ate it for breakfast the next day 🙂

I’m posting this today, at this time, in celebration of our 9th wedding anniversary today, when at 4:57 pm, we exchanged our vows and became the one of us.

Preheat oven to 350°F. Grease and flour a 9”x13” cake pan or 2 9″ round pans.

  • Sift together:
  • 2 c  flour
  • 1 t  cinnamon
  • 1 t  ground cloves
  • 1/2 t  allspice
  • 1/2 t  salt
  • 1 t baking soda

In a separate bowl, beat:

  • 2 eggs
  • 2 c brown sugar
  • 1 c buttermilk
  • 2/3 c vegetable oil

Fold dry ingredients into egg mixture.  Pour into pan and bake until edges brown and pull away from the sides of the pan, about 45 minutes.

Cream Cheese Frosting:

Cream together 1/2 c (1 stick) unsalted butter, and 8 oz. cream cheese, softened.  Add 1 t vanilla.  Beat in 1 lb of confectionary sugar, beating well until smooth and creamy.  (I like to add 1 t of orange zest to this, yum….)

Best served on August 4.
